Black Bean Burgers
(this is actually a double recipe...I like to make a bunch to freeze some. Cut it in half if you only want one recipe)
2 1/2 lbs. ground turkey
2 15-oz. cans black beans, drained and rinsed
1 c. crushed tortilla chips
1 tsp. salt
1/2 tsp. pepper
1/2 tsp. garlic powder
2 Tbsp. chili powder
2 tsp. cumin
Mix all that together in a large bowl and mix with your hands.
Form into patties. (Makes about 20 patties)
I freeze the ones I don't want to cook right away,
and just leave out a few for supper.
Heat some extra virgin olive oil (2-3 Tbsp. or so) in a large skillet. Cook the burgers about 4-5 minutes per side, or until no longer pink in the middle.
We like to eat them topped with a mixture of avacado and salsa. (Although I'm sure they would be great on a bun like a regular burger, as well).
They are adult approved...and kid approved. We all love them!

These look awesome, I'm going to have to try these. I've tired bean burgers before and I love them, but the Mr wasn't a fan. These look a little more up his alley. :D

yep we love them and it is not just because we like to eat healthy:) They are seriously good. The recipe actually says to top them with a mixture of 1 cup salsa, 1 avocado, and 1 cup of frozen corn, thawed.

Oh yeah...I forgot I changed that part of the recipe, Mom! It is good with corn mixed in, too, but we like it better with just salsa and avacado :)
Yum! I am so hungry at the moment that this is torturing me a little :D I would have never thought to put chips in a burger, but what a great idea :)
